Perhaps it is because of the precious gastronomic legacy that this land has handed down to us, that we strive to preserve the most authentic and genuine flavours. Perhaps it is because eating out is a pleasure and so it should remain. Perhaps it is because our territory is so precious that we cannot but adhere to projects of sustainable development aimed at reducing pollution and environmental impact…. Whatever the reason, we had no hesitation in joining the ecoristorazione trentina [Trentino eco-restaurants] project.
Ecoristorazione trentina requires adherence to a very rigid protocol, participants must follow a set of rules which include; the use of local water, the adoption of a ‘Trentino supply chain-based menu with local ingredients and products, the reduction of waste and a convenient “Doggy-bag service” for bringing home one’s leftovers.
